A little smoke flavor enhances veggies, and without added salt.
Here is a good way to get acquainted with how great smoked vegetables can be.
Smoke-cook 5 - 6 tomatoes, a couple of yellow squash, an onion, 3 - 4 sweet red peppers and 4 cloves of garlic for a couple of hours at 180F.
Core the tomatoes, remove the stems from the peppers, and peel the skins off the garlic cloves. Puree in food processor.
Variation(s):
Mix a little of the puree with sour cream and a dash of hot sauce for a cold sauce for meats and fish.
Or add mayonnaise and hot sauce for a sandwich spread.
Or make a cold soup by adding olive oil, vinegar and chopped cucumbers. |
