      Rio Grande Smoked Chicken Salad
    Ingredients Method
    1 lb. smoked chicken, finely chopped
    15 oz. can black beans, rinsed and drained
    15 oz. can whole kernel corn, rinsed and drained
    4 Roma tomatoes, seeded and diced
    1/2 c. diced green onion
    2 jalapeño or serrano peppers, seeded and minced
    1/2 c. prepared Italian salad dressing
    1 Tbs. dry taco seasoning mix
    In a large mixing bowl combine the chicken, beans, corn, tomatoes, onion and peppers, tossing well to blend.In a small mixing bowl combine the salad dressing with taco seasoning mix; pour over chicken mixture, blending well.

    Refrigerate until serving time.

    Serve on crisp lettuce leaves garnished with additional tomatoes and jalapeño or serrano peppers, if desired.

    Yield: 4 servings
