Load smoker oven with 40 lb. steamship round. Load wood box with 10 oz. hickory or mesquite, or a blend. Smoke-cook at 250ºF for 45 minutes, then 190ºF for 13 hours. This cooks the round to medium well in the center. For a rarer center, smoke-cook for 12 hours at 190ºF.
