Clean and dry prime ribs.
LOADING THE SMOKER
Product: Load prime ribs 1 per grill.
Position prime ribs so that they do not touch the sides of the oven. Close and latch the smoker's door.
Wood: Load wood box with 8 oz. hickory wood.
SMOKE-COOKING
For medium rare, smoke-cook at 180°F for 12 minutes per lb. Hold for 1 hour at 150°F. Increase cooking time for medium and medium well.
When the prime rib is done, remove from the smoker and cool at room temperature for 30 minutes. Wrap and refrigerate.
TO BRING BACK
Heat for one hour at 225°F. (We do not recommend this, due to a loss of quality of product.) |
