This cut is the sirloin muscle off the top butt. It's a very tender cut, even with the minimal cook time described in this preparation.
Set 3 - 5 lb. triangles on smoker grills. Smoke-cook to 110ºF internally, about 1 hour, 20 minutes. Remove from smoker, chill, finish on grill to medium rare. Slice for serving.
