Make cup shaped containers from heavy duty aluminum foil.
Thinly slice both squashes and the onion. Mix all the vegetables together. Put about a cup of the mixture into each foil cup. Season to taste.
Pinch together the top and punch a couple of holes around the top, to allow just a little smoke to penetrate. Place the vegetable cups in the smoker and cook at 200F for 1 hour with hickory or apple wood.
