Maple Smoked Lamb Shanks with Whiskey Onion Marmalade
    Ingredients Method
    12 medium lamb shanks

    For Marinade:
    4 oz. whiskey
    16 oz. red wine
    1 Tbs. garlic
    2 Tbs. rosemary
    2 Tbs. black pepper
    2 Tbs. Salt

    For Whiskey Onion Marmalade:
    3 lb. sliced onions
    ¼ c. butter
    2 Tbs. black pepper
    ½ c. whiskey
    Salt to taste
    Combine ingredients and marinate lamb shanks for 24 hours.

    Smoke with maple wood at 225F for 4 hours, or until tender.

    For Whiskey Onion Marmalade:Sauté the onions until soft. Add the whiskey and simmer for 14 minutes.

    Recommended wood: For fish, try apple or cherry.
