Sweet-Liqueur Smoked Whole Turkey
    Ingredients Method
    1 washed and cleaned turkey
    2 oz. Nassau Royal or other sweet liqueur, such as Southern Comfort
    2 oz. clarified butter
    1 oz. salt
    1 oz. pepper
    1 oz. granulated garlic

    Wash and dry turkey. Rub inside and out with seasoning. With a large veterinary shot needle, inject turkey with liqueur and clear butter. Smoke-cook 9 hours at 180º - 200ºF.
