1 Cornish game hen (8 - 10 oz)
Raisin Compote:
2 c. seedless raisins
2 ea. shallots, minced
1/2 c. dry white wine
Juice of one lemon
1 Tbs. granulated sugar
1 Tbs. toasted ground cumin
1/2 Tbs. salt
1/2 Tbs. fresh ground pepper
Cranberry Compote:
1 c. whole fresh cranberries
2 Tbs. granulated sugar
1/4 c. Zinfandel or dry red wine
Zest of 1/2 orange
2 whole cloves
Clean hens and cut in half, lengthwise.

Raisin Compote:
Add all ingredients. In sauce pan, bring to boil. Cover and simmer for 1 hour.
Set aside.
Cranberry Compote:
Combine all ingredients in sauce pan and simmer 10 minutes. Set aside.
Place fresh bread in center of plate; place smoked hens on top; sauce on opposite sides; garnish with fresh cranberries, whole and julienne chives.
