2 heads romaine lettuce cut into 1"x 1" pieces
1/2 c. olive oil
24 croutons
4 cloves garlic, crushed
3 anchovy filets (pureed)
3 Tbs. lemon juice
2 egg yolks
1/2 c. Parmesan cheese (grated)
12 oz. shredded smoked chicken breast
12 slices Roma tomatoes
Salt and pepper, freshly ground

Whip egg yolks until they start to turn white, 5 to 10 minutes. Whip in oil, garlic, anchovies, lemon, and half the Parmesan cheese. Add salt and pepper to taste. Toss lettuce and dressing; add chicken, arrange croutons, and tomatoes. Sprinkle with Parmesan cheese.
Garnish with Greek olives and feta cheese.
