2 Cornish game hens
1 tsp. fresh oregano, chopped
2 Tbs. olive oil
1 tsp. fresh thyme, chopped
1/2 c. fresh lemon juice
1 tsp. fresh rosemary, chopped
1 c. fresh orange juice
1 tsp. fresh basil, chopped
3 garlic cloves, crushed

Combine olive oil, lemon juice, orange juice, garlic and herbs. Pour mixture over the cleaned game hens and refrigerate 1 - 2 hours, turning occasionally.
Cut 3 carrots and 2 celery ribs into strips and thinly slice 2 red onions. Remove game hens from marinade. Salt and pepper inside and outside. Stuff cavity of each equally with vegetables. Smoke-cook at 225ºF for 2 - 3 hours or until juices run clear.
