Cookshack Smoked Chicken
Ingredients Method
18, 3 lb. chickens Clean chickens and dry to touch. Rub outside with vegetable oil or mayonnaise. Apply Cookshack Spicy Chicken Rub.

Load wood box with 10 oz. hickory or apple wood.

Load chickens 4 per grill, on top 4 grills. Load 2 chickens on bottom grill. Position chickens so that they do not touch each other or the sides of the oven. Close and latch the smoker's door. Smoke-cook at 225ºF for 3 1/2 hours.

When the chickens are done, remove from the smoker and cool at room temperature for 30 minutes. Wrap and refrigerate. Serve with Cookshack Spicy Barbecue Sauce.

Recommended wood: Hickory or Mesquite
